Spicy Cauliflower Rice, Avocado
When it comes to leftovers or low quantity of ingredients in your fridge - I can make anything!
This is my favorite way to cook as it forces myself to create something out of nothing. All I want is delicious food and to be creative all the time!
I had a lot of fun making this dish because again I wasn't sure what I was going to make and I was just present in the moment.
Let's get right into it and not waste any more time!
- Cauliflower, grated
- 1 Sweet Potato, steamed
- 1 Red Pepper, chopped
- White Miso
- Extra Virgin Olive Oil
- Nutritional Yeast
- Coconut Milk
- Sea salt
- Black Pepper
First, cut your sweet potato into smaller bits and give it a quick steam until it softens up and you can puncture a fork through it. In a blender, add the sweet potato, red pepper, 2 garlic cloves, 1 tbs of Extra Virgin Olive Oil, splash of coconut milk, 1/4 cup nutritional yeast, 1 tsp white miso, and seasoning to your liking. Give this a good blend in a vitamix or blender until it is smooth and creamy.
I didn't of cashews or almonds when I wanted to make a cheese sauce and sweet potato was laying around hence why I used a sweet potato. I think it thickens the texture just a bit and a good source of protein.
With your cauliflower, grab a grater and start grating your cauliflower. It will begin to almost look like rice! I've tricked people into thinking that it was rice! So much fun!
Add your spicy sweet potato and red pepper sauce and mix the cauliflower rice together. be careful you may eat it all before you serve to friends and family.
Don't forget the avocado! I peel the skin off the avocado first gently and then on started to cut slices - keep the avocado intact and then form the shape you wish you desire - I tried making it first into a avocado rose, but it wasn't budging to the shape I wanted, so I settle for this ribbon like feature!
